Celebrating the discovery of an unknown wild yeast growing on the local barley. This yeast was then cultivated and used in the fermentation process.
Nose: Initially ripe spanspek, pungent and spicy, then wafts of sweet new make and syrupy barley sugar, making way for doughy bread.
Palate: Rich, viscous and buttery, vanilla custard splashes on the tongue, then the warming spice and chilli bite.
