Privateer rum made in Ipswich, Massachusetts, begins with Grade A Fancy Molasses. It then breaks away from tradition by fermenting for longer at a cooler temperature.
The rum is double distilled with the first distillation done in a pot still and then redistilled in a column still with 8 plates adding powerful aromatic structure to the already rich and densely flavoured spirit.
All spirit off the still is clear and dry (meaning it has no sugar). The distillery has a terroir you can taste in the spirit. It is situated on a salt marsh off the ocean, and on the finish of the Navy Yard, you may taste a tangy mineral note from the briny air. It is then aged for 2 years and 8 months, in a new American Oak Barrel with a #3 level char and is decanted and bottled at cask strength.
