Gaia, the neopagan goddess of yore, a personification of Mother Earth herself, is a fitting custodian to bring forth Ireland’s first whisky distilled from certified organic Irish barley (42%), first fill US (17%), virgin US (23%), premium French wine (18%) and Vin Doux Naturel.
Nose: Wild orange blossom honeycomb, with a sifting of explosive, punchy vanilla pod into this sweetest mix, a slice of greengage plum and a sprinkling of frosted barley flakes, with an intense hit of sweet grass and baclava in the syrupy depths.
Palate: Whisky butter coated with icing sugar, the mid palate then swamped with an iced macchiato topped with molten white chocolate, drying quickly to a herbal and pine resin finish.
