This series showcases the intensity of natural flavours and honesty from the old ways and represent real rarity because of the true scarcity of the raw materials. This 38 ppm peated single malt combines a very marked smoky character with animal, earthy and saline notes. A touch of spices and vegetable scents bring it a welcome freshness.
There are only 11,500 bottles available globally, and only 500 of these are available in South Africa.
Tasting notes:
Nose: Turf (peat), saltiness, pear skin, woodland moss, hay, lemon skin,
dried thyme, malted biscuits, marzipan, cooked banana, sweet
floralness, wattle and daub, golden syrup.
Palate: Farm tastes, dry rub that you would use on a BBQ, bog myrtle,
clove sweets , leather, maraschino cherry, barley husks, gooseberry jam.

We selected two Single Farm Origin barleys – with distinctive terroirs – to see if those naturally occurring flavours shone through or were in fact dominated by peat. Finding the right quality Irish
peat was a challenge but the greatest problem of all was there were no operational kilns left in Ireland; the knowledge had been forgotten. We needed Scottish help. While the peating levels (phenols expressed as parts per million) are similar to famous Islay whiskies such as Port Charlotte and Ardbeg and more than Bowmore or Lagavulin, the extraordinary result is distinctly different with the intensity of Ireland’s barley shining through the encompassing envelope of refined peatiness.

Tasting notes:
Nose: Soft peat, almonds, crisp, lavender honey, reminds me of a seaside
escape, driftwood fire smoke, green apples, padrón peppers, salt
crust, a morning walk on a fresh day.
Palate: Peat kick, very chewable, BBQ fish by the sea, buttery, warm apple
and almond tart with honeycomb ice cream, wool, frangipane,

The second release of Waterford’s Gaia single malt, which is made with organic barley from a selection of Irish growers. A series which champions farmers that are growing barley with sustainable methods that respect the land and prioritise flavour over yield. Gaia Organic 2.1 is made with barley harvested in 2016.
Tasting notes:
Aromas of orange peel, freshly-baked bread, milk chocolate, fig rolls, lavender, marshmallows and buttermilk that fill the nose, complemented by notes of white pepper, grapefruit, liquorice, cherries, dark chocolate, toast, peaches and lemon zest throughout the palate.

Tasting notes:
Nose: Barley all the way, strong, creamy cereal note. It’s malty with floral honey, gingerbread and fresh apple. Just deliciously fresh.
Palate: Super creamy. It’s all about feeling that texture in the mouth. Then there’s cloves, cinnamon and custard, with peach and apple. Beautifully balanced, it’s that cereal note going on and on and on.

Tasting notes:
Nose: Honey-drenched barley, freshly cut lucerne hay, the sweet organic notes so dominant in this expression. Sugarcane, warm flapjacks drizzled with golden syrup, butterscotch, uncooked fruit cake mix, melted butter on a honeyed crumpet.
Palate: Viscous barley sugar, with lemon tang and salted fresh ginger root washing over the tongue, then cracked black pepper and gorgeous caramelised muscovado sugar on the finish with a curious sweet sardine note lingering on the aftertaste.

Tasting notes:
Nose: Freshly baled eragrostis hay, honey-glazed. Satsuma plums, a toffee apple dusted with cinnamon, the barley and sweet grassy organic character more prominent that the Gaia, with hints of wild mint.
Palate: The honeyed cereals and sweet cut grass wash the palate, the organic character dominating initially, warming spices and salted caramel coat the rest of the tongue, with barley sugar drying on the finish.
